More People, More Food

From 1,359,027 habitants in 1881, Québec's population had grown to 2,874,662 by 1931. The percentage of Quebecers living in cities rose from 36.1% in 1901 to 63.1% in 1931. The number of inhabitants in Montréal doubled between 1896 and 1911. This population increase led to greater demand for food.
