The Quebec Preserving Co., founded in 1902 on Rue Smith, had over 40 employees and did business as far away as the Maritimes and Ontario

Between 1900 and 1930, the food industry became a major industrial sector in Québec as a result of the growing needs of a larger population. In 1939, the food and beverage processing industry represented 19.3% of Québec manufacturing output. The Canadian railroad system made it possible to distribute food nationwide. A number of companies, like cookie company Biscuiterie Viau, were very successful in the provincial market.
