In the early 1940s, Joseph Vaillancourt brought the bakery into the industrial age. By 1947, his mechanized facility on Saint Joseph Street in Québec City produced ten thousand loaves a day—ten times the amount other bakeries could produce! The same year, brothers Charles and Antonio Vaillancourt founded Produits Diana, a specialized bakery subsidiary.

The Vaillancourt bakery brought us the famous “May West” cake. The company was bought by its competitor Vachon in 1972.
